PROPERTIES: Forest honey is also known as honeydew honey. Instead of gathering nectar from flowers only, when making forest honey, bees collect honeydew from trees. The bees can’t be held accountable for how much honey they produce, so we cannot guarantee yields from year to year. We may never be able to offer this unique honey again.

Organic honey crystallizes, solidifies, and hardens in a short period of time as well as in lower temperatures. It is a natural process, and honey is totally safe to eat.

Most people think crystallized honey is not pure honey and fake. So here we have the answer.

Why organic forest honey crystallized?

Honey contains 2 supersaturated forms of sugar, that is, glucose and fructose. Honey contains a total of 70% sugar (glucose and fructose) and less than 20% of water. The excess amount of sugars makes it unstable, a natural process occurs and honey crystallizes. Fructose is also known as fruit sugar. Generally, fructose ranges around 45% and glucose ranges around 25%. It is not only low temperature that makes honey crystallize.

There are 3 reasons, that honey gets crystallizes,

The ratio of glucose and fructose,

Pollen:

Pollen in honey is totally normal. It actually shows the origin of honey. Honey with pollen is great but if the pollen ratio is increased in honey, it will also show less resistance towards crystallization.

Temperature:

When the honey jar is stored at a temperature lower than 15ºC, the honey will crystallize. The best practice is to keep honey at room temperature as honey never get spoiled
